Favorite Spring Recipe
The spring equinox (also, called the vernal equinox) was on Monday, March 20, 2017. Spring officially began at 6:29 A.M. EDT. Did you know that The equinox happens at the same moment worldwide, even if we are in different time zones? Not only is Spring a time of nature’s renewal, it is also a great time to have our home deeply cleaned. For information about our spring cleaning prices, give us a call at 330.477.0801
We all have our favorite recipes for summer, fall and winter. I love “cooking seasonal”. My favorite recipe for spring is Spring Pasta Salad. I found this recipe on the Food Network in 2013 and love it! Props to Jeff Mauro for this one!
Ingredients
Dressing:
Pasta:
Directions
For the dressing: In a small bowl, whisk together the olive oil, Dijon mustard, honey, garlic, lemon zest and juice, and season with salt and pepper.
For the pasta: Toss the pasta with the asparagus, peas, roasted peppers, tomatoes, shallots and dill. Pour the dressing over the salad, tossing to coat. Let the salad hang out for a bit to soak up all of the flavor.
When ready to serve, bowl it up and shave some ricotta salata over the top to seal the deal.
