Grilled Sweet Potatoes
Grilled sweet potatoes make a perfect addition for a Thanksgiving meal. While candied yam and sweet potatoes are some of the most traditional ways of preparing this delicious meal, you can also put these in an oven.
Ingredients for grilled sweet potatoes:
The ingredients required are 3 Sweet potatoes (unpeeled), ¼ cup canola oil or olive oil, ¼ cup fresh coriander (finely chopped), a pinch of cayenne pepper, Black pepper, and 2 tsp of lime zest, salt.
Instructions:
Pre-cook the potatoes before you grill it in order to speed up the cooking process. To do this, place the potatoes in a pan of boiling water and cook until potatoes are tender. Remove the potatoes from the water, drain and cool.
Put the cayenne pepper, salt and a tablespoon of lemon zest in a bowl until it is well blended. This will be used this as a seasoning after grilling.
Cut the potatoes into eight pieces to form a wedge. Brush each wedge freely with canola or olive oil and add season to each wedge with salt and black pepper on all sides. Now, clean the grill and prepare the grill for cooking. Preheat the grill to medium temperature to medium-high.
If the potatoes are cooked directly on the grill, brush the grill with olive oil. Place the sweet potato wedges directly on the grill grate and cook. It usually takes 1 ½ minutes for each side to be cooked. Make sure to grill all sides. When it is cooked, remove the potato wedge plates and place it on a serving plate. Immediately spice the mixture of salt and cayenne pepper, and sprinkle with chopped cilantro until the potatoes are still hot.
Enjoy!
